The very first time I had game meat was after my Dad had taken me hunting. We were
staying with my grandparents in west Texas and we got up early one morning and drove
out to my grandfather’s farm. I remember walking through the field and suddenly
a flock of quail would take flight. Then bam from my dad’s shotgun and a quail
would fall from the sky. That was also the first time I got to fire a shotgun. Wow,
what an experience.

Later that night, we had quail for dinner. I can still imagine the flavor, and texture
of the meat. It was unlike anything that I had ever had before. Knowing that I had
gone hunting with my Dad and this meal had come from our efforts was an amazing feeling.

I recently tried a bison burger at a local restaurant. It was awful. It tasted like
the cook had prepared it exactly like it would have been prepared if it was beef. It
had the same fixings, the same sauces, nothing to enhance the flavor of the meat. I
was so looking forward to that meal and then to be let down. I was very disappointed.

A couple of weekends ago I was invited over to a friend’s home for an evening
meal. It was a very enjoyable time. He talked about how he had been the one to hunt
for the deer that he was preparing for us. He talked about getting up early and
heading out to the blind and waiting for the exact moment to take the shot. It brought
back fond memories of the first time that I had been hunting with my Dad.

After listening to his hunting stories I couldn’t wait for the meal. It looked
like it was going to be really good. It looked a little over-cooked but, it looked
really good. Sadly, the meat was awful. He cooked it like he would have cooked
anything else. It was dry; it had very little flavor. I had to choke it down with what
felt like a gallon of water. He didn’t understand how venison should be cooked.
He didn’t understand the subtle hints, the textures and tastes of cooking
venison. I really felt sorry for my friend. He was so proud of the meal and the
hunting experience. I just didn’t have the heart to tell him that it was
anything but excellent.

After those experiences I knew that there must be a better way. I realize that most
people think that game meats are just like any other meat. The reality is that there
not even close. They have different cooking times. They have different textures. They
have different flavors. I have trained as a cook and know that you always have to
think about the type of meat that you are preparing. There are different marinades
that need to be used to bring out the flavor, different sauces to go on the meat once
prepared, different cooking times and so much more to take into consideration.
